
I have a vegan friend who wanted me to share a recipe that they use quite often. Being as they do not own a computer or television I have a post it note. They use homemade Gluten-free dough but would not share the recipe with me… yet! They did give me the go to post this wonder and widely popular vegan pizza recipe for you to try at home.
You will need to get the following:
1 Whole Wheat Crust
¼ teaspoon natural salt
1/3 teaspoon of black pepper
1/4 cup of organic vegetable stock
½ cup of freshly chopped basil
2 ripe tomatoes sliced (heirloom are preferred)
2 cups of cannellini beans
1 tablespoon of olive oil
4 cloves of minced garlic
¼ cup of sliced olives
Heat your oil in a large deep skillet, once your oil is heated add in your garlic. Let your garlic simmer for 3 minutes then add your beans, salt, and pepper. Mash your beans breaking them up while stirring in your broth. Continue to stir on medium heat until your mixture is smooth and creamy. This process should take about ten minutes or so. Once you have reached a creamy mixture add in 1/3 of your basil.
Next you spread the mixture on top of your pizza then place your tomatoes and the remainder of your basil on top of your pie along with your olives.
If you are using your own crust bake until the crust is finished normally this is 12-15 minutes in a 375 degree F. pre-heated oven. Let your pie rest about 5 minutes before eating.
