
Eating healthy should not mean sacrificing taste. I love different pizza’s and trying new toppings that do not give me that feeling of regret afterward. Breaking ground on new pizza’s is something that I strive to find for our readers here at Pizzaoven.com. This pizza is unlike any pizza I have ever had.
Start out with a thawed frozen gluten-free crust you can get from most retailers like Trader Joe’s, Wild Oats, or Whole Foods depending on your location. At this time you will want to turn on the broiler on and pre-heat your oven. If your oven does not have a broil you will want it around 475F.
As a sauce I use a lemon based dressing that is also put to use for salads. It is light breezy and tastes amazing.
For the sauce you will need:
1 lemon zest
3 juiced lemons
1 tablespoon of extra virgin olive oil (EVOO)
2 tablespoons of honey (to taste)
Dash of black pepper
1 teaspoon of minced garlic
Mix all ingredients together then add a little tap water, shake well, and refrigerate.
For Pizza:
1 pizza crust
1/3 cup of roasted walnuts
1 ¼ cup of mixed green (spring mix prefered)
1 teaspoon of dill
6 oz of goats cheese (crumbled works best)
.2 cups of baby beets (peeled, boiled, cut, and quartered)
I like to roast my own walnuts for about 5-10 minutes in the oven just to pull out the flavor of the nuts. While my walnuts are roasting toss the mixed greens, dil, and baby beets into the sauce you made before. DO NOT POUR mixture on the pizza crust! You want lift your mixture out with a slatted spoon and allow sauce to drain back into the sauce bowl. Add your cheese over the mixture and by this time you should be taking your walnuts out of the oven. Carefully place your HOT walnuts on your pizza and pop the entire pizza into the oven for about five minutes. This pizza will be a little cool but that is okay you want it cool. Use the extra sauce as salad dressing. Make a wonderful summer salad with spring mix, feta cheese, roasted walnuts, and some dried cranberries add 1 tablespoon of dressing per cup of salad.
Now grab your ingredients a nice bottle of red wine and GO!!
